Make it at home
Carrot-Ginger Soup
- 4 carrots, chopped
- 1 onion, chopped
- 1-inch piece fresh ginger
- 3 cups low-sodium vegetable broth
- 1 tablespoon olive oil
- Salt and pepper
- Saute the onion and ginger in the oil for 3 minutes.
- Add the carrots and broth and simmer 20 minutes.
- Blend until smooth and season to taste.
Carrots are rich in beta-carotene, and a little olive oil helps your body absorb it. Regular eye exams are the best way to look after your eyes.
Kale, Egg & Sweet Potato Hash
- 1 sweet potato, diced small
- 2 cups chopped kale
- 2 eggs
- 1 tablespoon olive oil
- Salt, pepper and paprika
- Cook the sweet potato in the oil for 8 to 10 minutes until tender.
- Add the kale and cook 2 minutes until wilted.
- Make two wells, crack in the eggs, cover and cook 3 to 4 minutes.
Kale and eggs contain lutein and zeaxanthin, plant pigments found in the eye. Regular eye exams are the best way to look after your eyes.
